Banana & Oat Pancakes - a treat without the cheat!

These pancakes are nutritious, taste like an indulgent treat and leave you feeling energised for the day.

Makes 2 Servings


Pancake Mix:

150g oats

2 x medium banana

1 x large egg

80ml x milk of choice (I use oat or almond by Plenish)

1tsp cinnamon (optional)


Toppings:

150g greek yoghurt

50g raspberries (I use frozen so they are super juicy!)

50g blueberries (I use frozen so they are super juicy!)

Drizzle of agave syrup or honey


Method:

Blend the oats, banana, egg and milk together to form the pancake mix. Heat some coconut oil in a frying pan on a low to medium heat. I add the mixture to the pan by using a biscuit cutter to ensure the pancakes are the same size. Leave for around 3-4 minutes before flipping. They should be golden brown in colour.


Serve with your choice of toppings!
